Pull up a chair and get ready for some killer Q courtesy of Sparky's.
Here, Chef Kevin Kehoe and restaurateur Hans Seitz join forces to present their own personalized version of Casual American Barbecue.
Relying on the prodigious talents of CIA-trained Kehoe, Sparky's combines traditional smoking techniques with a unique take on dry rubs and regional barbecue sauces.
The result is a wholly original dining experience presented in a comfy roadside setting.
Still, what most sets Sparky's apart is the quality of the meat.
These folks start with prime-grade beef and pork and use grilling wood made from young, grown-in-the-wild Apple and Hickory trees.
Employing a state-of-the-art Friedrich Smoker, Sparky's meats are slow-cooked for 2 Ż - 11 hours.
Meanwhile, Sparky's spice rub is scratch-made using over two-dozen secret ingredients, thus creating meats that are heavenly - even without BBQ sauce! And finally, all of the aforementioned sauces are homemade, from the Traditional and Apple Cider to the Hoisin and Sweet & Spicy Guava Habanero.
In fact, every single item served here - except the French fries and ketchup - is scratch-made onsite, including the awesome desserts.
Sparky's menu is short but hearty and rib-sticking good.
Speaking of ribs, you can enjoy Baby Backs and Beef Short Ribs direct from the smoker, along with Beef Brisket, Chicken on the bone, and both Pulled Pork and Chicken.
Plus, there are five sides to choose from, each as luscious as the BBQ.
