A graduate of Florida Culinary Institute, Burgio’s gastronomic repertoire includes classic French training honed as Executive Sous Chef at Café Boulud Palm Beach as well as experience in a diverse range of culinary cuisines executed as Sous Chef at Addison Reserve Country Club. Burgio joined the Titou Hospitality team in 2021 where he steers the direction and execution of one of West Palm Beach’s most popular kitchens.

    We went here on a Tuesday night. It was surprisingly busy in December, likely because of the holiday season.

    Among the items we purchased: the lentil salad, the charred broccolini & eggplant, the beet salad, and the salmon. All were reasonably tasty. Not the biggest portions, but big enough I suppose, especially if you think of them as tapas.

    Also, our server had an extra dramatic pep in him, which made our dinner slightly more entertaining.

    For dessert, we got the profiteroles; they come with the restaurant’s namesake (pistachios). Try it out.

    Note that happy hour options are available, but they are only allowed at the bar (which might get packed).

    Reviewing a restaurant on a special occasion, when they offer only a limited price fixed menu may not be the best timing, but here goes: We dined at Pistache for Valentines Day.

    The onion soup was good – great body, plenty of onions and the crouton and cheese crust were great. I suspect that they put too much sugar in when they caramelized the onions – understandable if making mass quantities. The escargot were perfectly cooked – nice and tender. There was a bit too much seasoning (I think tarragon) for my personal taste but we still enjoyed it.

    The duck confit with lentils was quite tasty – the lentils perfectly seasoned and flavorful. It was quite a large portion and enjoyable. The only dish that was not good was the boeuf bourguignon. Instead of using a beef for stew, they appeared to use short rib instead. It gave the beef a strange and unpleasant texture and flavor. That’s a shame, since the pearl onions and mushrooms in sauce were excellent.

    Our deserts were refreshing. Although there were relatively few wines by the glass, we had an excellent cabernet at a reasonable price. Had we wanted a bottle there was a really nice selection. We did have a really nice dinner; Pistache is attractive and comfortable. Our server (really slammed because of the crowd) was pleasant and helpful.

    We were a large party on New Year’s Eve- without a reservation (and 5 children) – they sat us at a lovely
    Indoor table. We were there on the earlier side, 6:30pm but we were so pleased to even find a restaurant much less a well-sought after one.
    They had a price fixed menu @$90.00 a person. She did not give us a price for the children but said it would be discounted. (She wound up not charging us for the children at all, which was very kind.) The drinks ordered were strong but good! For the appetizer, I had the escargot and my husband had the crispy pork belly. Both were superb. For dinner, I had the beef bourgeion which was a heavy choice- I could barely finish it but so tasty. There were about 5 choices for dessert- I had the chocolate mousse. It was good but not the best I have had. My husband had the raspberry cake- it was clearly the dessert winner. Was it worth the $90 a pop price tag? Probably not. But, our service was wonderful, the food excellent, and the atmosphere classy.

    This was quite a delightful restaurant located near the hotel we were staying at. They have a nice indoor as well as outdoor dining area but we chose to dine indoor. We went early around 5:30pm so it was not too busy which was perfect.

    We started with a salmon tartare and it was delicious. I loved the taro chips it came with and it was the star place of the evening for me at least. I ordered the duck breast and was very excited to have it but sadly, it fell short. It was dry. My husband got the filet with fries and it was cooked very nicely. The complimentary bread with butter was delicious. They have a good wine selection and we ordered a bottle of sparkling rose (Gerard Bertrand), which was excellent.

    The service was very good considering how a lot of restaurants are having a hard time with having enough staff.

    Looking forward to coming here again the next time we are in WPB.

    Probably one of the best French meals I’ve had in South Florida. Everything was amazing and came at the right temperature with great plating. A good experience from our first cocktails to our dessert! The service was really attentive. My London Calling cocktail was sweet and fruity. The menu had so many options. We started with a fomage plate with sopressetta fiore, duck prosciutto and pate de campagne. Each one was delicious. The duck was so unique and unlike any prosciutto I’ve ever had. The pate was rich and creamy. The sopressetta had a nice kick and garlicky punch. All the pickles, apples and grapes really complimented the meats.

    The burgundy Escargot was perfectly cooked with lots of garlic butter to dip bread in after you took out the clean and flavorful morsel out. The French onion soup had a lot of onions with just the right amount of layered bread and cheese. Then our entrees came out and my husband and I both loved our choices. My Hudson Valley duck breast was a huge portion. Tender juicy meat with sweet kabocha squash puree and the best caramelized Brussel sprouts I’ve ever had. My husband’s beef bourguignon was super rich and beefy. Also came in a hefty portion. We had to end on a nice sweet note so we got the apple cake to share and it was delightful. Hot with cold and soft with crunchy, this was the perfect way to end the evening.

    Although they list themselves as a Bistro, I feel it is probably closer to a Brasserie but since it sits in West Palm and not France, let’s not split hairs.

    What Pistache does is transport you to another place for a little while where you can enjoy some very good French / European dishes in an intimate yet semi-casual setting.

    Pistache is located towards the end of busy Clematis street on the north side of Flagler park. There is seating both in and outdoors depending on your mood (and the weather). Reservation s are recommended, even during the week.

    With that said, we popped in on a Wednesday evening and had a short wait for a table. The hostess was great, and we popped over by the medium sized bar to wait for our table.

    Dining room is decently sized and on the noisy side- there seems to be a lot of echo going on but nothing horrible. There is also covered seating available outside.

    Waitress was quick to come by and get us started with drinks and appetizers. We went with the charcuterie board and truffle and blue fries.
    Truffle anything makes me nervous as most places overdo it with the truffle oil but Pistache hit is perfectly. Just the right amount of truffle oil to amp up the fires without overpowering them or the bleu cheese.

    Steak au poivre was perfectly cooked and nicely peppered. My wife went with the pork chop special and again, perfectly cooked: juicy inside and crisp outside. Roasted veggies accompanied the pork chop and they were divine. Frites were side for the filet and perfect as well.

    A couple of glasses of wine with dinner and we even went for the chocolate mousse dessert to finish the night.

    Prices were average for W.Palm which is to say, not exactly cheap. To be fair, you will feel like you got what you paid for.

    Overall a great place for the dinner date, or just to sit back and enjoy a great meal.

    Parking is hazardous at best in the Clematis area – so good luck with that.

    Went for a Saturday Brunch. Our server Alexa was accommodating and attentive through out. The restaurant was clean and attractively decorated. I began the meal with a cocktail called a FRENCH 75 which I enjoyed and my wife got the Unlimited Rose of which she enjoyed every glass.

    For apps we got a chocolate and a regular Croissant… both were light and airy. I got to enjoy the French Onion Soup and my wife enjoyed the Escargot and ended up mopping up the liquid with the table bread.

    For the entrée we had mixed emotions and the reason for the score of 4 not 5. I got the Eggs Benedict which included spinach on a sour dough bread. I ate it all. My wife got the Fried Green Tomatoes BLT. The bacon was a very thick piece of fat that could best be described as clumsy. With no bacon there was nothing to offset the taste of the green tomatoes. Her meal included grits which was more cream then grits flavor. I contemplated giving a rating of 3 because of this but everything else was so well done. We ended our meal with a chocolate Mousse which made for a nice ending to the meal.
